Ingredients:

  • ½ finely chopped cabbage
  • 2 tbsp green moong dal (split green gram) washed and drained
  • 2 tbsp rice chawal (washed and drained)
  • ½ tsp ghee
  • ¼ tsp cumin seeds (jeera)
  • A pinch of asafoetida (hing)
  • A pinch of turmeric powder (haldi)
  • Restricted quantity of salt (optional)

 The method of preparation:

  • Combine the rice, moong dal and one cup of water in a pressure cooker. Mix well and pressure cook for three whistles.
  • Allow the steam to escape before opening the lid.
  • Heat the ghee in a broad non-stick pan and add the cumin seeds.
  • When the cumin seeds crackle, add the asafoetida and sauté on a medium flame for 5 seconds.
  • Add the cabbage and sauté on a medium flame for 2 to 3 minutes or till the cabbage turns soft.
  • Add the cooked dal-rice mixture, turmeric powder and salt, mix well and cook on a medium flame for a minute.
  • Cook lightly and serve lukewarm.

This popular breakfast/snack recipe is kobi cha bhanole which is basically a savoury cabbage cake. The description may not sound tempting, but after you’ve made and tasted this recipe, I can bet you’ll want to make it again and again. The best part? You can actually store this cake in your fridge for a couple of days or more. So you can easily whip up a batch on Sunday and eat it throughout the week. Bhanole is usually made either in the oven or is steamed and then shallow fried a little. I like to shallow fry it in a pan directly without steaming. Here goes the recipe:

Ingredients:
1 small cabbage finely chopped
1 onion chopped
1 tomato diced
2 green chillies chopped
½ cup soaked chana dal
1 tsp garam masala
1 tsp jeera
½ tsp hing
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp ginger garlic paste
Salt to taste
1 tbsp oil
A bunch of coriander leaves

Method:
1. Drain the chana dal. Put it in the grinder along with chillies and ginger garlic paste. Grind this moisture together.
2. Put this mixture in the bowl along with cabbage, onion, tomato, garam masala, turmeric, salt, oil, red chilli podwer and coriander. Mix it well with a little water. The batter should be a little thick.
3. In a pan, heat some oil and put jeera seeds and hing.
4. Pour the mixture on the pan and cover with lid. Cook for about 5 minutes. The flip the other side.
5. It should turn a little brown on both sides.
6. Turn off the flame. Cut the round ‘cake’ into squares.
7. Serve hot with chutney or ketchup.

‘In monsoon most of the diseases are waterborne. So what we eat also plays an important role. All these days in summer body was craving for food which was in cold temperature – cold water, juices and shakes, a lot of water containing fruits and vegetables to keep the body hydrated. But in monsoon, fighting infection and building the immunity is more important because we may get prone to a lot of infectious diseases like cold, cough, flu and fever,’ explains Raj.

Rain brings in new water as well as water bound diseases. Waterborne diseases mainly caused due to E-coli, salmonella, mould and other bacteria. To keep the body warm and safe from infection protein and antioxidant-rich food plays an important role. Here is your complete food guide for monsoon:

1:Eat only hot cooked fresh food all the time. Read: Udad dal parathas: A perfect healthy welcome treat for monsoon!

2:Do not eat food that has strange odour or mould. Because of rain and climate people also get tempted to a lot of fried food like pakodas, samosa etc. which may lead to throat pain and other ailments.

3:Some of our ancestor’s foods like rasam with garlic or hing tadka, steamed and protein-rich foods like dhokla and sundals, puffed rice is safe snacks than fried foods.

4:Prefer foods in room temperature. Do not consume stale and refrigerated foods like ice cream, cold juices, golas, kulfis etc., and also street food should be strictly avoided.

5:Avoid the salads that are chopped outside as they spoil fast. ReadDitch the pakodas, try this healthy chaat for monsoon, recommends dietician!

‘Cabbage, broccoli could help prevent colon cancer’

The findings revealed that mice fed on a diet rich in indole-3-carbinol (I3C) — which is produced when we digest these vegetables — were protected from gut inflammation and colon cancer as it activates a protein called the aryl hydrocarbon receptor (AhR).

AhR acts as an environmental sensor, passing signals to immune cells and epithelial cells in the gut lining to protect us from inflammatory responses to the trillions of bacteria that live in the gut.

In the study, published in the journal Immunity, when genetically modified mice — that cannot produce or activate AhR in their guts — were fed a diet enriched with I3C, they did not develop inflammation or cancer.

But “when mice whose cancer was already developing were switched to the I3C-enriched diet, they ended up with significantly fewer tumours which were also more benign,” said lead author Amina Metidji from the Francis Crick Institute in the UK.

Moreover, the team found that normal mice fed on standard or I3C-enriched food did not develop tumours, while those fed on a ‘purified control diet’ developed colon tumours within 10 weeks.

Purified control diets contain exact mixtures of carbohydrates, proteins, fats and fibres enriched with vitamins and minerals, but have fewer AhR-promoting chemicals.

“This suggests that even without genetic risk factors, a diet devoid of vegetable matter can lead to colon cancer,” the researchers noted.

The study shows that while we cannot “change the genetic factors that increase our risk of cancer, we can probably mitigate these risks by adopting an appropriate diet with plenty of vegetables”.
